This is an example of a cutting order. You can specify how your beef is processed (based on how you like to cook and eat). You can see here that this customer has specified 3lb Chuck Roasts, 1/2lb Rump Roasts, wants soup bones and liver but is passing on the heart and tongue. They are getting all their steaks cut to 3/4 inch and have mostly specified 2 cuts per package. They are also wanting their ground beef and stew meat in 1lb packages.
